Introduction
Elevate partnered with T2 Hospitality and the Thompson Denver to bring a chef-driven food and beverage concept to life, anchored by acclaimed chef Ludo Lefebvre. The result was Chez Maggy, a modern French bistro designed to serve both hotel guests and the broader Denver community.
Challenge
T2 Hospitality, a California-based real estate property developer, was developing a flagship hotel property in Denver and recognized that a standout culinary program would be essential to establishing the hotel as a true destination within the market. They were seeking a nationally recognized chef partner who could not only deliver an exceptional dining experience, but also bring credibility, visibility, and long-term brand equity to the property. However, identifying the right talent, and structuring a partnership that aligned creatively and operationally, required deep industry access and expertise. T2 needed a partner who could bridge the gap between real estate development and culinary execution, ensuring the concept would resonate locally while standing out nationally. They needed a nationally recognized chef to help create an award winning Food & Beverage experience for their hotel guests and the community at large.
Solution
As Chef Ludo Lefebvre’s representation agency, Elevate culinary team identified the opportunity and facilitated a strategic partnership between the chef and T2 Hospitality. Elevate culinary team worked closely with both parties to shape the concept from the ground up, guiding everything from positioning and creative direction to operational alignment. The result was Chez Maggy, a French bistro rooted in Chef Ludo’s classical training, reimagined with a warm, approachable style and subtle Midwestern influences to connect with the Denver market. By aligning a globally recognized chef with a thoughtfully localized concept, Elevate helped create a restaurant that functions as both a standalone dining destination and a key pillar of the hotel’s overall guest experience.
